Ok...so I found this track and really love the syncopated beat:

I'm hoping someone might be able to point me in the direction of a podcast or mixes with the same sort of 'feel' as the track above (mellow, chilled beats with or without vocals).

hey source i went and checked it.

look up chevs first vinyl mix (ill link if i find it). its got that vibe and i got a few leads from the track list.

mount kimbie and james blake come straight to mind.

also check chev's (Cairo) mix of Jack Dixon - Be There. great chilled track.

Great track there man, definitely keep on MJ Cole, dude has some amazing tunes.

A few artist I recommend are Todd Edwards (OG Don of garage), Duncan Powell, Whistla, C.R.S.T., Synkro, Sully and Deadboy. For mixes I'd listen to Whistla's Sub.FM show and any mixes by Oneman, always got some UKG in his sets.

Also check out Well Rounded Records and L2S Records, to great labels that put out a lot of UKG stuff, especially L2S which is pretty much all garage.
